rawfish season is a special time on the Mississippi Gulf Coast. This beloved season falls between mid-winter and late spring, and is a beautiful thing to behold. The air is crisp and the sun is bright. The wonderful aroma of the boil can be found in backyards, parks, restaurants and bars. These familiar wafts of flavor delight the nose, and create big smiles for all around. There is no such thing as a stranger at a crawfish boil. Friends, both new and old, surround the crawfish table and create an instant fellowship. The perfect crawfish boil usually has great music and tons of laughs. It truly is one of my most favorite times of year.
